How To Make Your Own Chicken Seasoning Cubes

Stock cubes are those cubes we add to our cooking to enhance the taste of the food. popular brands include: Maggi, Knorr, Royco etc.

Homemade stock cubes are perfect for:

  1. Preparing kids recipes especially for kids less than 1 year old.
  2. Preparing meals for those who are intolerant to MSG. MSG stands for Monosodium Glutamate [Ajinomoto] which is the taste enhancing ingredients that is used in most stock cubes. Msg is aid to be safe for most of us but if you are intolerant to MSG, you will know or your doctor will tell you. Google it and you will find lots about it.
  3. Those who are concerned about the ingredients used in making stock cubes. You know some people really want to know what they put in their mouth and there are lots of chemical ingredients added to stock cubes. if you are one of those people, you need to start making your own stock cubes.

Storage: I keep mine in the freezer for up to 1 month

Usage: Add the cubes to your taste, it is all natural so there is no risk of adding too much.


For chicken flavored homemade stock cubes, you will need:

  1. Chicken bones or minced chicken breast
  2. Leeks [or spring onions]
  3. Onion
  4. Carrots
  5. Salt to taste[optional]

For fish flavored homemade stock cubes, you will need:

  1. Mackerel/Titus heads
  2. Leek[spring onions]
  3. Onion
  4. Carrots
  5. Salt to taste[optional]

For beef flavored homemade stock cubes, you will need:

  1. Cow ribs [ Costilla de tenera/vaca in Spanish]
  2. Leek[spring onions
  3. Onion
  4. Carrots
  5. Salt to taste[optional]

For vegetables homemade stock cubes: Here, you will need to use your favorite vegetables and herbs, cut them up, put them in a pot, add vegetable oil and salt and cook till they are very soft. blend and pass through a sieve then pour in ice cube trays and freeze. Vegetables and herbs you can use include:

  1. Leeks[or spring onions]
  2. Onions
  3. Carrots
  4. Scent leaves or parsley
  5. Garlic
  6. Ginger
  7. Basil
  8. Rosemary.

Note: Leeks are root vegetables that belong to the family as onions. they look like giant spring onions. it not common in Nigeria, so use spring onions a alternative.


The directions described here is for making chicken flavored stock cubes, but the same procedure applies to beef, fish flavored homemade stock cubes.

  1. Cut up the chicken and vegetables into small pieces.
  2. Put everything in a pot, add water to half the level of the contents of the pot and cook on medium to high heat for 45 minutes or till everything is soft and tender.
  3. Set aside to cool down completely.
  4. Remove the bones from the chicken
  5. Blend the chicken and vegetables.
  6. Strain with a sieve to remove all traces of bones and other particles that did not blend well.
  7. Pour into ice cube trays and place in the freezer overnight.
  8. Once frozen, bring out from the ice cube trays and put in a container with a cap.
  9. Cover and put back in the freezer. That's it!
